This menu is a springtime story told in several perfectly balanced acts. It begins lightly — shrimp with buttery brioche and garlic olive oil gently awakens the appetite and sets the tone for an evening of elegance.
Then things grow warmer: teriyaki-glazed confit pork belly with mango and coriander combines sweetness, umami, and freshness, bringing a relaxed and enjoyable atmosphere to the table. Cream of asparagus soup with citrus foam offers a moment to pause — a light, green accent at the very heart of the story.
The climax is cod served with potato fondant, zucchini and spinach purée, and a langoustine sauce, finished with aromatic wild garlic olive oil — a dish that is elegant, deep, and refined in every detail.
Finally, dessert: a mango and raspberry parfait with passion fruit and pistachio — a fresh, fruity finale that closes the evening on a light and joyful note.
