Our Chef, Maciej Glanowski, has prepared two versions of a unique tasting menu – a four-course journey through seasonal flavors, local produce, and culinary imagination. Each dish is a fusion of tradition and modernity, seasonality and elegance.
On September 19th, we will take you on a culinary journey that begins with a refreshing contrast – delicate shrimp paired with the exotic sweetness of mango and the crispness of cucumber, all crowned with a playful prawn cracker for a touch of crunch. Then comes the warmth of autumn in a bowl – the velvety sweetness of sweet potato cream, wrapping you in its silky flavor. The main course is the heart of the evening – melt-in-your-mouth beef cheeks accompanied by light ribbons of vegetable tagliatelle, adding freshness and elegance to the dish. And for the finale – autumn in its purest form. Juicy plums beneath a golden crumble. A dessert that transforms the last bite into a sweet, unforgettable memory.
This is not our only autumn offering. In November, we invite you to another edition of the Chef’s Dinner, where he will delight our Guests with another exceptional four-course menu that will be remembered for a long time.
On the evening of November 21st, we will begin with delicacy – scallops enveloped in a creamy celery purée, accented with parsley oil and the crispness of carrot. An introduction as subtle and intriguing as the first notes of music. The next course unveils the essence of depth and aroma. Velvety crayfish cream with a toast topped with crayfish butter will transport Guests on a culinary journey to the southern coasts. The main course is the climax of the dinner – juicy, tender halibut paired with truffle-scented potatoes, accompanied by a silky porcini sauce. This dish unites the flavors of sea and forest, creating a pure harmony of taste. For the finale – a classic with a surprising twist. Lavender tiramisu balances tradition and modernity. Its sweetness and creaminess intertwine with floral aromatic notes, leaving an elegant, serene conclusion to the evening.
